Weight Watchers Lemon Cake

Adapted from WW Smart Recipes

Calories: 133, 2.2g fat, trans fat 0.8g, unsat fat, 5g cholesterol, carbs, 0.6mg fiber, 8.9g sugar, 5g protein



Ingredients

1/2 cup sugar

3 large eggs

1 cup plain fat-free Greek yogurt (used Chobani)

1/4 cup vegetable oil

1/4 cup unsweetened applesauce

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1 Tbsp lemon zest

4 Tbsp lemon juice, divided (2 for bread, 2 for glaze)

1/2 cup Swerve confectioners sugar replacement

Instructions

In a large mixing bowl or mixer, add the eggs, sugar, and yogurt. Mix until smooth.

Add oil and applesauce, mix again.

Zest and juice the lemon. Add the lemon zest, lemon juice, and vanilla extra, then mix again.

In a separate bowl, add the flour, baking powder, baking soda, and salt. Whisk to combine.

Slowly add flour mixture to liquid mix.  Combine well.

Pour batter into a loaf pan. Bake at 350 for 40 to 45 minutes until a toothpick inserted into the center comes out clean.

Glaze Directions

To make the glaze, whisk together Swerve confectioners and 2 Tbsp of lemon juice.  Pour glaze over the top of loaf once completely cooled.
