Ingredients
1 lb boneless chicken breast (used tenderloins)
1 jar of salsa (used pineapple)
1 cup frozen corn
1 cup diced onion
1 cup diced peppers
1/4 cup of lime juice
1.4 Tbsp chili powder
1/2 tsp paprika
Instructions
Line crockpot or spray with non-stick cooking spray.
Lay chicken across bottom.
Add in corn, peppers, onions.
Sprinkle in the chili powder and paprika, then pour in the jar of salsa.
Add the lime juice.
Cooked on low for 4 hours.
Using a fork, shred teh chicken in the crockpot. You can serve immediately or freeze for later.
