Upside Down Slow Cooker Apple Pie

Servings: 8
80 calories per serving; 1 Weight Watcher Freestyle Point per serving

8 cups Granny Smith Apples (peeled and sliced)
2 tablespoons cornstarch
3 tablespoons Truvia no-calorie sweetener
1 teaspoon vanilla extract
2 teaspoons lemon juice
2 sheets (8 crackers) graham crackers

Place apples in a slow cooker sprayed with non-stick spray (I used slow cooker liners)

In a medium bowl, combine cornstarch with 3/4 cup water. Whisk with a fork to dissolve.  Add all remaining ingredients and seasonings except graham crackers. Whisk well.

Pour cornstarch mixture over apples. Stir to coat.

Cover and cook on high for 1 1/2 hours or until apples have softened and liquid has thickened.

Top each serving with 1 crushed graham cracker.
