Crockpot Italian Chicken

Ingredients

4 boneless chicken breasts

1 medium Vidalia onion, chopped

6 slices of Swiss cheese

1 tsp garlic powder

1 tsp black pepper

1/2 cup butter (I used I Can't Believe It's Not Butter Light)

10 oz Rotel Diced Tomatoes & Chiles

10 oz Cream of Mushroom Soup, Healthy Request

1 1/2 cups dry stuffing mix (used Stove Top Savory Herbs)

1 cup chicken broth

Directions

Line a 6-quart crockpot or spray with non-stick spray.

Chop onion, and place in bottom of crockpot.

Lay chicken breasts on top of the chopped onion.

Sprinkle garlic powder and pepper on chicken. Top each piece of chicken with one slice of Swiss cheese.

Add stuffing mix then pour melted butter over chicken.

Pour Rotel and cream of mushroom soup over chicken then add chicken broth.

Cover and cook on low for 8 hours, or on high for 6.
