Snickerdoodle Bread

 


Adapted from Drizzle Me Skinny!

10 servings, 159 fat, 3.4 g sat fat, 1.9 g carbs, 26 g fiber, 0.9 g sugar 10.2 g, protein 4.4 g

Ingredients

3 eggs

1/3 cup brown sugar

1/2 cup unsweetened apple sauce

1/3 cup non-fat plain Greek yogurt

1 tsp vanilla (substituted apple pie spice)

1 3/4 cup flour

1 tsp baking powder

1/2 tsp baking soda

2 tsp cinnamon

1/4 cup butterscotch chips

TOPPING

1 tsp brown sugar

1/2 tsp cinnamon

Directions

Preheat oven to 350 degrees and spray a regular loaf pan with cooking spray.

In a large bowl, whisk eggs, and add in brown sugar. Mix in apple sauce, yogurt, and vanilla (or spice) and stir well.

In separate bowl, mix flour, baking powder, soda, and 2 tsp cinnamon, and mix well.

Slowly mix into wet mixture.

Shake butterscotch chips with a pinch of cinnamon. You can chop up prior to shaking, but I did not.

Fold chips into batter. Spoon batter into loaf pan.

In a small bowl, mix 1 tsp brown sugar and 1/2 tsp cinnamon together and sprinkle evenly on top of batter.

Bake in the oven for 45 minutes or until baked through.

Let cool, cut into 10 servings.  Store in fridge or freeze.
