Beef Stir Fry

One of my favorite things to fix is beef stir fry in our wok. We have all been fighting colds, so I kept it simple and bought the vegetables already cut.

1 lb of chopped sirloin
Assorted vegetables
1 16 oz bottle of Light Catalina Dressing
1 clove of garlic

Remove chopped sirloin and place in sturdy plastic container. Drizzle and mix entire bottle of Catalina dressing over the meat. Cover and refrigerate overnight to marinade.

Plug in wok. Melt 1 tablespoon of butter and chop garlic into heated wok. Cook garlic until brown. Add broccoli, cook for 10 minutes, add other vegetables, stir and cover for 5 minutes.

Move all vegetables to the side of the wok, increase heat to high. Pour meat with marinade into bottom of the wok. Stir until meat is cooked.

Combine meat and vegetables, cover and let simmer on low for 10 minutes.

Serve with your choice of rice.
