Slow Cooker Shredded Mexican Chicken

67 calories, .9g fat, 2 g saturated fat, 2.3g carbs, .5g fiber, .7g sugar, 11g protein

Thank you to The Skinny Dish for the recipe. I modified some.



Ingredients
2 lbs. raw boneless, skinless chicken breasts
1 medium onion, chopped (used Vidalia)
3 cloves garlic (minced)
2 tsp vegetable or olive oil
1 15 oz can tomato sauce
1 4 oz can diced green chiles
1 cup chicken broth, fat free
1 tbsp cumin
1 tbsp chili powder
2 tsp coriander
dash of salt
1 tsp pepper
a few dashes of your favorite hot sauce

Instructions
In a skillet, heat oil and add onions, and garlic.l  Cook until soft then add to slow cooker.

Add the rest of the ingredients to the slow cooker, and stir, combining well.

Cook on low for 7-8 hours, or high for 5.  Remove chicken, shred, and return to slow cooker for 20 to 30 minutes.  Enjoy!
