Ingredients
1 small Vidalia onion, chopped
1 can (15.5 oz) black beans, drained and rinsed
1 can (15.5 oz) kidney beans, drained and rinsed
1 can (8 oz) tomato sauce
12 oz package frozen corn kernels
2 cans (10 oz) diced tomatoes with chiles
4 oz can chopped green chili peppers
1 packet reduced sodium taco seasoning
1 tbsp cumin
1 tbsp chili powder
3 lbs chicken breast (used tenders)
Directions
Combine chopped onion, beans, tomato sauce, corn, diced tomatoes, chili peppers, and seasonings. Stir well.
Place in slow cooker.
Sink chicken into mixture in slow cooker.
Cook on LOW 6 to 8 hours, or on high 4 to 6 hours. Half hour before serving, remove chicken, shred, and return to slow cooker for another 30 minutes.
