Barbecued Chicken Sandwiches

Serves 15

3 lbs uncooked boneless chicken breast
1 cup ketchup
1 small onion, chopped
1/4 cup water
1/4 cup cider vinegar
2 Tbsp. Worcestershire sauce
1 Tbsp. brown sugar
1 garlic clove, minced
2 shakes of Thyme (calls for bay leaf)
2 tsp. paprika
1 tsp. oregano
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper

Place chicken in slow cooker.

In a mixing bowl, combine ketchup, onion, water, vinegar, Worcestershire sauce, brown sugar, garlic, bay leaf (substituted thyme), and seasonings.  Pour over chicken.

Cover. Cook on low 3-4 hours.

Shred chicken and return to slow cooker.  Cover and cook on low an additional 30 minutes.

120 calories per serving, 2 g. total fat, 30 mg cholesterol, 320 mg sodium, 6 g carbohydrates, 19 g protein.
