Lightened Chicken Parmesan


Combine 1/4 cup each Italian style bread crumbs and grated Parmesan Cheese.

Arrange 4 thin-sliced chicken breast cutlets (about 1 lb). (I used chicken tenderloins) on foil-lined baking sheet;  sprinkle tops with 1/4 tsp. talk, then with crumbs, pressing to adhere.

Arrange 1 pt. grape tomatoes, halved, around chicken; spray with nonstick cooking spray.

Bake at 425 degrees for 15 minutes.

Sprinkle cutlets with 2 oz part-skim mozzarella, shredded.  Bake until cheese melts.
