Low-Fat Chicken Salad

Ingredients

1 1/2 lbs of shredded, cooked chicken

1/4 cup onion, finely sliced

1/4 cup celery, finely sliced

Juice from 1 medium lemon

Salt & pepper to taste

1 tablespoon spicy mustard

1 cup of 0% non-fat, plain Greek yogurt

1/2 cups fo sliced grapes (used green)

1 medium apple, finely diced (used honeycrisp)

Directions

1. Shred chicken

2. Finely slice onions, and celery.

3.  Place the onions, celery, lemon juice, salt, pepper, spicy mustard, and Greek yogurt into a separate bowl.

4.  Pour the sauce over the chicken and stir together. 

5. Add grapes and apple.

6. Refrigerate at least 4 hours before serving.
