Low Fat Chocolate Chocolate Chip Banana Bread

5 Weight Watcher Points Plus Per Serving
Makes 12 Servings


Cook Time: 1 hour


Ingredients
1 3/4 cups whole wheat pastry flour
1/4 cup unsweetened cocoa powder
3/4 tsp baking soda
1/4 tsp salt
1/2 cup firmly packed brown sugar
1 tbsp canola oil
1 large egg beaten (Egg Beaters for me)
1/2 cup low-fat buttermilk
1 tsp vanilla
1 1/2 cups mashed bananas (about 2 medium)
1/3 cup chocolate chips (optional)

Preheat the oven to 350 degrees.

Whisk flour, cocoa powder, baking soda and salt in a large bowl.  Combine sugar, oil, egg, buttermilk and vanilla in a medium bowl.  Add wet ingredients to dry, and stir until just moist.  Fold in mashed bananas, followed by chocolate chips if using. Empty batter into a 9 X 5 loaf pan coated with nonstick cooking spray.

Bake for 55 minutes to an hour.

How do you make your own buttermilk? Note in the picture a bottle of white vinegar.  Take one tablespoon of white vinegar and add it to one cup of low-fat milk.  Measure out what you need for your recipe!
