Slow Cooker Lime Chicken
3 WW Points Plus per serving
1 serving=1 cup
*Points do not include wraps or tortilla shells.
1 1/2 pounds boneless skinless chicken breasts
3 tablespoons lime juice
1 tablespoon chili powder
1 cup frozen corn
1 cup chunky salsa (I used a whole jar of Newman's Pineapple Salsa)
Place the chicken in a 3-quart slow cooker. Combine the lime juice and chili powder; pour over the chicken. Cover and cook on low for 5-6 hours.
Remove chicken and shred meat with two forks and return to the slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. Serve in wraps, tortillas, or I put on a salad to make a taco salad.
