1 serving=1 meatloaf
Ingredients
1 pound raw extra-lean ground beef
3/4 cup canned crushed tomatoes
1/2 cup panko breadcrumbs (used Wegman's brand)
1/2 cup canned black beans (drained and rinsed)
1/2 cup frozen sweet corn kernels
1/2 cup shredded reduced-fat Mexican cheese blend
1 tablespoon taco seasoning
Directions
Preheat oven to 350 degrees. Line a 12-cup muffin pan with foil baking cups, or spray it with non-stick spray.
In a large bowl, combine beef, tomatoes, breadcrumbs, beans, corn, and seasoning. Mix thoroughly.
Evenly fill muffin pan, and smooth out the tops. Bake until firm and cooked through with lightly browned edges. Cook approximately 35 minutes.
Top with cheese. Bake until melted.
