Cinnamon Cake

Ingredients

1/2 cup whole wheat flour

1/2 cup oat flour

1/3 cup Monk Fruit granulated sweetener

1tsp ground cinnamon

1/2 cup unsweetened applesauce

1/2 cup nonfat plain Greek yogurt

1 large egg

1tsp vanilla extract

3 tbsp unsweetened almond milk

Cinnamon Crumb. Topping

2 tbsp oat flour

2 tbsp granular brown sugar alternative (I use Swerve)

1 tsp ground cinnamon

1 tbsp light butter

Directions

Preheat oven to 350 degrees. Spray an 8X8 baking pan with nonstick spray.

In a medium bowl, whisk together whole wheat flour, oat flour, sweetener, baking powder, baking soda, and cinnamon.

In a separate bowl, whisk the applesauce, Greek yogurt, egg, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients. Stir until combined.  Spread batter evenly into the prepared pan.

In a small bowl, combine the crumb topping ingredients (oat flour, brown sweetener, cinnamon, and butter) until crumbly. Sprinkle evenly over the cake batter.

Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
