Weight Watchers Banana Bread-Round 3

Ingredients

3 large ripe bananas, mashed

2 large eggs

1/2 cup unsweetened applesauce

1 tsp vanilla extract

1/2 Monk Fruit Sweetener

1 3/4 cups wheat flour

1 tsp baking soda

1/2 tsp ground cinnamon

1/2 tsp pumpkin spice

Directions

Preheat oven to 350 degrees. Lightly spray a 0X5 inch loaf with non-stick cooking spray.

Mix the wet ingredients - in a large bowl, thoroughly mas the ripe bananas. Whisk in the eggs, applesauce, vanilla extract, and monk fruit sweetener.

Combine the dry ingredients - whisk together the flour, baking soda, cinnamon, and pumpkin spice.

Merge the wet and dry mixtures.  I used the mixer briefly to mix thoroughly.

Pour the batter into the loaf pan. Bake for 60 minutes.

Cool and cut into 12 equal portions.
