Low-Point Chocolate Chip Pumpkin Bread

Ingredients

(Dry)

3/4 cup whole wheat flour

3/4 cup oat flour

1 tsp baking soda

1/2 tsp baking powder

1 1/2 tbsp pumpkin pie spice

1 tsp ground cinnamon

(Wet)

1 cup pure canned pumpkin puree

1/2 cup unsweetened applesauce

2 large eggs

1/2 cup brown sugar sweetener (Lakanto Monkfruit Golden)

1/4 cup Monkfruit sweetener

1 tsp vanilla extract

Mix-in

1/3 cup Lily's semi-sweet baking chocolate chips

Directions

Preheat oven to 350 degrees. Spray loaf pan with non-stick spray.

In a large bowl, whisk together wheat flour, oat flour, baking soda, baking powder, pumpkin pie spice, and cinnamon.

In a medium bowl, whisk together the pumpkin puree, unsweetened applesauce, eggs, brown sugar, sweetener, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients. Stir gently using a spatula until combined.

Fold in Lily's chocolate chips.

Bake for 60 minutes (depending upon your oven).
