Ingredients
3 pounds red potatoes, halved
2 tablespoons extra virgin olive oil
3 teaspoons minced garlic
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried sweet basil
1/3 cup grated Parmesan
salt and pepper to taste
2 tablespoons unsalted butter (used I Can't Believe It's Not Butter Light)
2 tablespoons chopped parsley
Directions
Preheat oven to 400 degrees.
Get out baking sheet and cover in parchment or foil, spray with nonstick spray.
In a large mixing bowl, add halved potatoes.
Add olive oil, garlic, thyme, oregano, basil, and parmesan to the bowl.
Toss all ingredients to coat.
Layer potatoes across baking sheet with the skin side up.
Bake 20 minutes, and flip potatoes, baking another 20.
Melt butter and pour on potatoes when finished.
Garnish with parsley if desired.
